Suppose I try driver shafts from two different, reputable manufacturers (say Aldila and UST). If the shafts are approx. the same in weight, torque, kickpoint, and flex (true flex - frequency, not just the "S" or "R" stamp on it) should they perform and feel more or less the same?
Or am I (as a 15-handicap) going to be able to notice the difference between different manufacturer's shafts?

You mentioned true flex, but you also need to measure true torque and kick point too. Luckily everyone measures weight the same way, but manufactures don't on the other two parameters, just like flex. But if you were to go the Hireko Shaft Fitting Addendum and if all the numbers for cut shaft weight, frequency, torque, tip and butt stiffness are the same, the shaft will feel and perform similarly.
