I can't seem to go back far enough in the catalogs to find out about these clubs (AVATARJR). From the picture it looks as if the 5 iron is a hybrid but I can't figure out if the 7 and 9 irons are hybrids. Can you confirm?

Also, I assume these are also alloy clubs. Would they be safe enough for a senior to use them without fear of breakage?

Yes, the 5 7 and 7 are hybrids and manufactured from aluminum. They should be sufficient strength for an adult, but note the heads are lighter than a standard head.
