Is the 690 series wedge a USGA conforming club head?

These were entered into market long before the 2010 groove rule and met the standard then. The are grandfathered in except when playing under the Condition of Competition. If you want a very similar head that does have the USGA conforming grooves, then look at the Acer XB series.

I have a problem hitting my wedges fat. The guy at Callaway suggested their W grind so the club would slide under the ball rather than dig in. Do you have any wedges similar to that?

Their W-grind is a slightly wider sole designed for softer conditions. I wouldn't necessarily say this is wider, but these do have more bounce which will help from those conditions.

Does any of the lofted heads work well as a sand wedge?

There is ample bounce on the 60 degree model that it should have no problem for sand play. The 64 and 68 would probably be used only if there is hard packed sand.
