Hello - What ferrrule height would you recommend for the drive, hydrid, 7 iron and wedge? Thanks

That is more of a personal preference. However, the most popular would be 1/2" length.

For the junior irons, I need shafts for them. What tip diameter do I need for them?

The hybrid, iron, wedge and putter require a 0.370" shaft and the driver requires a 0.335" shaft.
